B is for Beans and Butternut squash


Roasted butternut squash & cannellini beans

I did it! Finally introduced beans in baby boy’s diet. A few weeks ago I saw a recipe on another mom’s blog using beans and I was kind of worried that it would make my son gassy… well I guess we’ll know about that tomorrow (sorry, TMI, I know) but at least I know he likes the taste 🙂

Simple recipe: blend smooth 1 small roasted butternut squash (cook at 375 for about 45min) with water. Add one nice scoop of cannellini beans (I bought a can from Whole Foods, organic non-gmo and no salt added) and blend quickly. (I wanted thr beans to add a bit of texture so I didn’t puree completely)

Serve warm 🙂
